I have add the priority field to my screen. It is visible as a P and only the icons are visible. is it possible to change the P in 'Priority" and the Icon in the priority level e.g. prio-1?

No, the field is deliberately compressed in the issue navigator to avoid it taking up lots of space (issue type does this too).  The fields are not compressed in most other places, as there's a bit more space for them.

(On server, you could hack the templates drawing the field so they didn't compress, but the handful of times I did it, I always undid it very quickly, because most people wanted to be able to see more columns in the issue navigator)

You can change the icons for the priority, yes - as an admin, go to Admin -> Issues -> Priorities, and you'll see you can edit the names and icons (I think someone already has in your system, I don't recognise the two yellow lines as a default icon!)
