 Insight is built into Cloud Premium. You cannot add it to Standard.

Welcome to the community.  Insight come with JSM Premium or Enterprise subscription out of the box.

Regarding the Atlassian documentation,  you will be able to access insight if you are on a licensed or trial version of Jira Service Management Premium or Enterprise :

Not in the standard version, but only available as part of Jira Service Management Enterprise or Premium
