Hello,
I have a problem with the child issue table display in my JIRA. Recently, without any particular action on the admin side, the table view has changed in a way that now columns are adjustable and column names are displayed. I noticed that it's applicable to all projects across the JIRA instance and for all users.
How can I change it back to a simpler, more minimalistic view?

Based on the announcement of this change, there does not appear to be a way to change back to the previous view.
You may want to add a comment to that post asking if there is a way to change back.

You may want to try the Issue Matrix app.
It enables you to create custom "matrices" for the Issue View screen. I can imagine that you can create exactly what the old behavior was or something that works even better for you!
