Are there any resources within Atlassian that would help us review our current JSM implementations as we plan to downgrade our service to Standard?
I've gone through the feature list and understand what the different products offers, but I would feel more at ease if there were someone from Atlassian that could help us go over everything and either confirm there wouldn't be any issues or if there is something critical that I had missed.

I would just use "Technical issues or bugs" as long you have the details of your concern in the support case. The support team should be able to route you to the appropriate team. Or you can contact your Atlassian account individual (if you know the person when your subscription/account was established originally).
My experiences with the support team were always positive and they are very helpful in our asks.

The only areas I would be careful with are anything outside the standard functionality, especially extended automations and any space or automation limits.
