In the case that I create an issue in our Service Desk, the field "Organizations" isn't present. But it should! :-)

This is a known issue because it's not an issue field it's a request field.
So basically created an issue and add organization afterward.

In request type if u have user/group picker field/s, it is hidden and u must preset a value. And you can preset a value in edit fields in your request type under other fields. I hope i understood what you say
