we´re changing our emails domain from .cz to .com - is there any simple way of changing currents users emails address so they´ll be able to access Jira Service Management after the domain change? Or we have to add all users to Jira again with a new email address?

Absolutely don't add all users again to Jira. They will loose access to all their previous work.
As the Jira admin make a support call to https://support.atlassian.com/requests/
Atlassian has scripts which will make these changes.
