I am trying to edit the content of the e-mails on internal notifications. I can edit the content and feel of Customer Notifications but not seeing anything for Internal.

That feature is not currently available. There is a change request for it to which you can add your vote.

The alternative is to use Automation Rules to create custom notification processes or to use a third party app.
