is it possible to disable the "Participant added" customer notification only for specific issue/request types and not for the entire project?

This is not possible with the Customer Notifications in the Project Settings. Those apply to all issue types in the project.
An alternative is to disable the notification there and use an Automation Rule to send a comparable notification (Send Email action) when participants are changed for only the specified issue type.
