Dear community,
I'm currently setting up our service desk and want to create a custom field with a dropdown list.
While I'm able to do so, I would like to make the options of the list dependent on the client. In other words, I want the user to select a project that belongs to this customer.
Does anyone know if this is possible, and if so how should I do this?

I'm trying to understand your question better. Are you trying to restrict the issue creation to certain projects based on the user? Or are you creating a new custom field (that is not related to the project)?
