Do you know if you are using Office 365 or where your email is hosted? Looking at a past response about how Gmail works here: https://community.atlassian.com/t5/Confluence-questions/Can-you-create-Jira-tickets-from-Google-calendar/qaq-p/589461

You would need to create a webhook or use a tool like Zapier to create a connection between your mail system to Jira.
