Is there a way to link existing boards that our development team use to a Jira Service Management board for customer issues? Or is there a way to create a new Service Management project against existing Jira boards?

To be clear you don’t “link boards” in Jira. You can link issues between projects. Boards are visual representations of a filter query. If you are asking how to create an issue in a JSW project that relates to a JSM issue then consider using “Create linked issue” in your JSM project to create a linked issue in your software project. You can also use Automation to keep the JSM issue updated based on the JSW issue.
Thanks Jack, we're just making sure we don't waste time by creating lots of Projects called "Product 1 Support", "Product 2 Support" if we don't need to.
