Auto-populate field with user's email address?

I am wondering if it's possible, whether through JIRA system or from an add-on, to auto-populate a field with a user's email address when you type their name (similar to when you type a name into the 'assignee' field and it pulls their profile/userID).

Yes this can be done using ScriptRunner. I suggest you look at the documentation here: https://scriptrunner.adaptavist.com/latest/index.html

You can focus on creating a Script Field.
