Audit Log captures extraction activity

Would like to know if the audit logs capture the extraction activity.

what exactly do you mean by "extraction activity" ?
Is it about csv exporting issues or site backup or anything else?

just for csv exporting issue. my workmate is asking me for the extraction date of the CSV extraction of service request and looking at the audit log, can't see any extraction activities.

As far as I know, this is not possible/not tracked. I would suggest a workaround, if this information is needed:

Create a filter with the relevant criteria and ad a filter subscription
