Anyway to visually change the "dropdown" choice in a form on the backend?

Hi all, if someone submits a form, on the backend you can see what they've submitted. But for dropdown fields, instead of their answer being black, its like a light grey on grey.
Even on dark theme its similar.
For those that are visually impaired, its super hard to see. Is there any possible way to make it more visibly defined? Or else maybe I should move to radio buttons?
