It appears that all current track tickets are labeled as "Trivial" which seems inconsistent with our usual prioritization practices which used to be “Major“ by default earlier.
Could you please help us understand why this change occurred or if there's a new process in place that we aren’t aware of?

It sounds like one of your Jira admins changed the default priority, when you change the default priority it will affect all projects. If you go to Settings > Issues > Priorities you can see which one is set to default and also change that.
@Mikael Sandberg - was the change apart of the latest updates we received in Jira last month or two months ago? I'm waiting to speak to one of our Jira admins to see if this was a change solely by one of them.

No, the change would have been done by your Jira admins, this would not have been part of any changes from Atlassian.
There is a new feature coming soon that would allow you to set priorities on the project level that would prevent you from affecting all projects when you change the default one.
