Workflows are more complicated that you're expecting (for company managed projects). You'll need to review this tutorial or video.

You cannot edit an ACTIVE workflow in major ways, like adding new statuses, transitions, etc. You can make changes to post-functions on active workflows (that's a bit more advanced).
