I am unable to see an update option when my Loom account links to Atlassian.

Is you account managed by your company, do you use SSO?
If so this can only by done at the IDP end, not in Atlassian.
If not, open your profile and change this in your settings.
Also I don't think Loom account link to your Atlassian Account..
