After my premium trial I decided to choose Standard as paying in USD from South Africa is so expensive. That being said my custom fields that I set up on the Premium trial have now disappeared with all the info I set up in them? Is there a way I can get them back without having to enter them all manually again?

I can see you have one workspace upgraded to Standard, are you looking at a board that sits outside of your workspace perhaps, which is why it doesn't have access to Custom Fields?
