how to prevent people (Guests not observers) from changing due dates after setting it on trello?

I am not aware of any settings to enable that. There are webhooks you can use to trigger an alert of such a change. It should be able to use it ‘disallow’ a change. I have done it for member added to a card to revert back to the member should anyone attempts to change or remove a member once it had been added. (Remember to keep a back door for the admin).
