Is there a way to hide custom fields or limit them to only one card?

I have a need to create different Custom Fields based on a specific Card template.  Is there a way to only apply Custom fields to certain cards, or is it all or nothing?

You can do something like this with the Amazing Fields Powerup .  It allows you to create fields for the board but then choose which fields are shown on which cards.  If you want to be really fancy you can use a formula to choose if a field is shown or not based upon other values on the card.

Yes, in Trello you can create different Custom Fields based on a specific Card template. Custom Fields can be added and removed on a per-board basis, so it is possible to only apply Custom Fields to certain boards or cards. However, when a Custom Field is added to a board or a card, it will be available for all cards on that board. It is not possible to restrict Custom Fields to certain cards on a board.
