ive found the joys of trello, we’re a Small business in the catering industry.
I would like to find a way to mange new Enquiries that come though our website.
Is IT support template the correct way of starting what I need to do?
Or is there a better way to get new email enquirers in to trello so that I can make a work flow from that initial email.

Welcome to the Community! It's great to hear Trello is such a key part for your business, first off I think you'd probably quite enjoy this Trello blog written by @Brittany Joiner discussing 'The Ultimate Trello for CRM Workflow Breakdown.'
As for templates, depending on all the details you want to include, I'd recommend you look at these (I've attached the links to make it easier 😃):
Support templates may also work but from your description above I believe a CRM/Sales Pipeline would work the best.
