I've tried to see if this is already answered but couldn't find anything, so apologies if it is!
I have custom fields on cards that are set (such as Analyst or Developer name) and they are on a board where there is a list per developement stage, but when I move a card from say analysis to design, it seems to clear the custom field drop down.
I need it to retain this information for reporting purposes, but can't see a way to do so. I don't have an automation set up to clear the custom field when it is moved, so I'm not sure why it's exhibiting this behaviour.
Any help is much appreciated.

Hope you are doing well.
I understand you are moving a card from one column to another column on same board. That means you are moving Jira issues from one status to another status. And during this action, one dropdown Field value is cleared.
I suggest you to check corresponding workflow post-function. And check if "Clear Field Value" post-function is in place with your drop-down Field name. If yes, then please remove that post-function and publish the workflow again.

Custom field data should be retained when a card is moved from one board to another.
What field type is this?
If it is a drop down field, if drop down options on the field in board A aren't exactly the same as board B, you could have a problem...

It's not being moved to another board, just another list in the same board. It's a drop down field that clears when it's moved which is strange.
