Is there anyway to change the default priority of unknown values from P3??

I don't think so - it's not mentioned as an option in the support pages.

For example, see here: https://support.atlassian.com/jira-service-management-cloud/docs/set-priority-levels-of-alerts/

It just states...

The alert has an unknown value or the tool has priority information. In this case, the alert gets the default priority which is P3.
