Can we remove the placeholder "Search for an object" which appears for insight custom field in Jira Service Desk customer portal.

You cannot remove it but you can change the default placeholder.
If you go to "Manage apps" ->"Insight Configuration" -> "Edit Settings" you can edit the two options at the end to change placeholder.
