Is there a way I can show story points for
- each card (Story Point Estimations)
- total story point estimations for the entire sprint
As i'm looking at the board, if I filter by person, then the total is adjusted to only show that person.
This way I can see how many SP's are estimated for each person, per sprint.
Further info: My boards are Org-Boards, not Team-Boards.
I've also modified the Issues/Issue Schema / Layout to show the SP Estimation and SP in the View/Edit issues. But the Story Points are not showing.

Welcome to our Community.
It seems you're using the scrum boards of company-managed projects.
If we wanna show the Story Points field in the Active sprint or Backlog views, then we can configure the board and add that field in the Backlog or Sprint through Card layout.
If we wanna see the total sprint points by assingee in the sprint planning or Backlog view, we can get them through:
If we also wanna see the sprint progress by assignee in the sprint process, then we may use Jira App (e.g. Sprint Reviewer Pro) to implement this requirement.

Based on your question, I assume you are using a Company-managed project. In that case, you should use the Story Points field, as Story Point Estimate is specific to Team-managed projects.
To add the field to your cards, follow these steps:

I believe I'm using Company-managed projects because i want to have company settings and then apply it to all the main projects we make.
Following your steps, I'm stuck on step 3. Click More(...) > Configure board.
Here's my board:
I'm not sure where to click. I've tried clicking on the various ---i see but none of them are "configure board".
