Is there documentation explaining the various ticket types and best practices?

I'd also recommend looking up Atlassian University, it's free and a comprehensive program to get started with Jira.
Keep in mind that Jira is very flexible, and many users configure their Jira instances to use different issue types, ticket types, and other Jira building blocks in very different ways. It really depends on your processes and workflows, but getting a grounding via Atlassian Community and other official resources will really help.
