I am looking for a way to set a default, multi-layered search in the "watched issues" gadget.  for example, I would like "Watched Issues" sorted by Project, then Epic Name, then epic link, then status, then Assignee.  Just putting the columns in that order does not seem to affect anything except the first sort priority.

you cannot do this in the Watched issues gadget but you can achieve by doing the following:

  1. create your own 'watched issues' filter - watcher = currentUser() AND resolution is EMPTY ORDER BY status DESC, issuetype DESC, project asc....
  2. save the filter
  3. add a Filtered list gadget and associate the saved filter
