In English the issue "Story" and "User" Story are distinct. In Italian Story is "User Story" so it's impossible distingues the issues. How is possible modify the name in Italian and resolve the ambiguos name?

I'm not sure if I have completely understood what is the feature you are talking about, but I believe you are talking about the Issue Type name. Is it correct?
To modify an issue type name, you can navigate to JIRA Settings > Issues > Issue Types > Click to Edit:
Let me know if you are talking about anything different. If that's the case, provide us a screenshot of the words you are talking about.

From what I’m understanding is there is a language translation break down when it comes to issue types with the Italian language. From this, the translation is vague from story to user story.
There are two courses of action which would be suggested to take. First would be to review your issue types within Jira and change your types as needed to avoid the translation issues you’re facing. More on changing your issue types may be found at Jira Server Associating issue types with projects and Jira cloud Adding, editing, and deleting an issue type scheme.
Secondly, we would suggest creating a feature request to have this translation issue addressed. I would like to create the request on your behalf, but I am afraid I would not know the proper verbiage to use within the Italian language. With this said, please create a request at Create feature request and once created please link the issue within this post. Please ensure to include screenshots and a proper translation that would help to avoid confusion.
