I am trying to create a Team-Managed Business project using the Kanban board, but it only creates a Team-Managed Software project. What am I doing wrong?
If I select the kanban template for a new project it gives me the option of team managed or company managed. I am finding no where to distinguish between a software project or a business project.

I assume you are trying to use the kanban template from the list of Jira project templates to create this project? If so, this template is a template for a software project and - as far as I know - there is no kanban template for business projects.
However, if you select the Work Management category in the templates gallery, all the available templates there are for business projects and they all come with a board as well.
It might be good to know that Atlassian is currently merging Jira Software and Jira Work Management into a single Jira. See this announcement blog published back in May, 2024. The difference between software and business projects will pretty soon no longer be relevant.

You need to choose a non software template project.
Kanban and Scrum are Software project templates.
