How do you unrelease a version that's been accidentally 'released'? I can't seem to find an option to manage versions, delete version or unrelease a released version.

You can do it straight through JIRA under the Manage Version link in the Project screen. URL is something like

BASENAME/secure/project/ManageVersions.jspa?pid=PROJECTID

I don't believe there is a link in the Greenhopper Planning board though
