I created the story and updated the security level as Product Road map, after I am creating sub-story that sub-story its automatically updated the security level values.
Here I do not want updated the security level value. Can you please help me how can I disable the security level value in the sub-story.

You don't. The security level of a sub-task goes along with the parent issue that it is part of.

I'd like to have an option to keep the subtasks public while the tasks is with the security level. Would be nice to have the option.

No, it would not. A sub-task is a part of a whole, and it's would make a nonsense of your issues if you can only see and work with part of one. That's exactly the opposite of what Jira is for.
