is it somehow possible to send an e-mail to a mail address stored within a custom field when an issue exceeds its SLA-time (we use the addon Time to SLA)?
If so, how do I configure it?

Does the add-on provide a way to search for issues that are overdue? If so, you can create a filter for it and subscribe to the results.
JIRA Service Desk offers this functionality.
