In Jira Align, we want and expect you to update your work items, especially stories, features, and epics. You and your team will need to update status and state, indicate when items are blocked, and add details as your items progress through their life cycles. You can edit them individually, or using our Mass Edit feature. To use Mass Edit, select multiple work items and make sure that only one program is selected in the Configuration bar. If you select multiple programs or no programs in the Configuration bar, the Mass Edit option will be greyed out and you won't be able to select it. Happy editing!

If you want to edit any field of issue type, answer is simply yes.
If you want to change issue types like from 'Epic' to 'Story', this is only possible if they share same Issue Type Schemes ( Administration > Issues > Issue Type Screen Schemes)

To add to DPK's answer - you can change issue types if they don't share all the same screens (screens / workflows) - you just need to 'move' rather than edit those issues.
You'll find Move in the more options section of Jira - either the "More" in Server or the options icon (3-dots) in Cloud.
