Can I do a project import from 7.2.7 to 7.2.8?

We were told by an Atlassian resource this was possible but according to the documentation, the exact same version is needed.

The docs and the code demand exactly the same version.

However, in most cases, importing from something of a different point release works fine.

Not all cases though, and that's why it's not supported - trying to test every case is a lot of effort for next to no reward - the better route is "upgrade to the right version", which is fully tested.

You should feel free to test it and check of course.
