Hi,
We are facing issue that is the Xray Test all test steps defined are removed(wiped out) when the XRay test status is updated from 'In Progress' to 'Done' status.
We have lost many XRay Test steps defined because of this issue is there is any way to retrieve back the wiped out steps of the Xray Test.

There is not feature in Xray to clear the steps when the workflow status changes.
This must be done by some external process.
I would suggest checking (or even turn off) all automation rules you may have, to find which one could be responsible for this.
