We have Jira Cloud and it seems like we had batch emailing until I changed our outgoing email server settings to send notifications from our support email address. Now, no emails are batched and we would like them to be. Is there any documentation that explains this? I can't seem to find it.

Batched email is available on cloud for Jira notifications. If you have JSM and expecting batch notifications for customers then that's not feasible.
