How to get Jira Service Desk to categorise clients? Edited

We have Jira and Jira service desk, however cannot seem to split our clients into groups. We would ideally like to have groups of clients which are within the same organisation grouped together automatically. How have others solved this?

How are you trying to split them? Are you using Organizations feature?
