Custom Fields for each Status

Is it possible to have different fields for each status in one workflow (and when the issue is finished show all the fields) ?

Yes, but they would have to be separate fields. I would either put them on the transition screen going between the statuses or if you know what they should be you can set them in a post function. Then put them on the view screen. If you put them on the edit screen you run the risk of someone setting them when they shouldn't.

I am not totally sure how to do it. Can you describe it a litte bit more exact.

You need to create fields for each status. The only way to make sure no one can update them is to put them on the transition screen going into our out of the status in question. Then only put them on the view screen so they can be seen, but not updated.
