I want to try out Grasshopper on top of my JIRA setup. After the 30 days, I may or may not buy the Grasshopper components. What happens then?

When you disable the plugin, as per Disabling Greenhopper - http://confluence.atlassian.com/display/GH/GreenHopper+Installation+and+Upgrade+Guide#GreenHopperInstallationandUpgradeGuide-install you won't have any further impact.
