Registry? Do you mean "issue"?
If so, then yes, the email handlers can set any issue type you choose (left blank, they use the project default)

one more question, it is possible receive a email-request; process the subject or the body mail, extract information or detect a text and create a issue with a specific type or maybe update a custom field, clasify the issue ? its that possible?

No, the standard handlers can only deal with summary, description, priority, project and issue type (and do some stuff around users if you cc people)
For more complex stuff, you'll need to find or write a listener that can do the parsing and business rules you want. I tend to reach for the JEMH add-on to do this though.
