Is it possible to reference eg. the creation-date of an issue within the jira-service-desk customer-notification-mail?
That means, are there only Variables available, which are in the drop-down list or all fields of the ticket?
something like ${issue.creationdate} - but this does not work.

We support the created date in our Templates in Notification Assistant for Jira
Unfortunately what they provide is what you get. I believe the email app JEMH allows you to do more but it as an app and costs additional money. Enterprise Mail Handler for Jira (JEMH) | Atlassian Marketplace
