With cloud you can use the Atlassian provided email and create a custom email if you like. So you could create help@mydomain.com but not help@atlassian.net. Unless your project name is “help” since the default email is project-key@atlassian.net. One other consideration would be to have your IT to set up support.atlassian.net to forward to help.atlassian.net.
