How can we add an extra notification or reminder that you have a case to process? Today we only get one notification when you have been assigned a case. We need the system to send one or more notifications when the due date is approaching and you have not completed the case.

You would need to leverage automation to send an extra notification like this as it's not supported with the 'out of the box' notifications.
For example, you could run a scheduled automation that looks at any issues whose due date is in 3 days (for example) and send an email to the assignee to remind them.

Sure. Assuming it's for a single Jira project and you are a project (or Jira) administrator, simply navigate to project settings > Automation.
