Any thoughts on why the emails are not being created as a ticket?
Email servers has been set up with a shared mailbox login and authentication is done via mirosoftOAuth
Mail handler is set up from the above mail server. Mail handler type is set to "create new issue..."
Project determined to where the tickets should go as well as issue type.
The user that is set to create the ticket has all the access rights in the project to create a ticket.
Any suggestions are much appreciated :)

What is the log of the email channel saying?
Can you post a screenshot? You can find them through Project Settings > Email Requests
