 Is there a way to Show / Hide fields based on other Field drop down values on Customer Portal?

This can not be done with regular Jira custom fields. But Jira Service Management has a feature called Forms. Within a form you can create dynamic fields.

The fields in the forms can also be linked to actual Jira fields if you need them in your search queries for example.

There are probably also some plugins doing similar stuff. (Forms used to be a plugin called ProForma and was acquired by Atlassian)
