I have a default incoming email that is associated with the email request type. I need to add a different incoming email address associate to a different request type. How do I configure this for it appears 1 Jira Service Project can have only one incoming email?
Is there a way to have emails from that email address have a different issue type from all other incoming emails?

You are correct. 1 JSM project can have only 1 incoming email address (that's something you could work around by forwarding mail aliases with your mail application) and only 1 request type (that cannot be changed).
So, if you need a different mail address to create a different issue type, the easiest way to work around the limitations, would probably be to set up a second JSM project for the second mail address and with the appropriate issue type / request type setup.

Currently, it is possible to add multiple (up to 10 email addresses) as custom mail addresses into the Jira Service Management Projects.
In addition, there is a possibility to different request type to the email addreses.
