When a ticket is resolved, fields like the attached are displayed.
I've looked everywhere and can't find this field.
Where should I go in settings?

This looks like a cascading list field. You should look at your Custom Fields and look for the
fields.
So "custom fields" should be where you can find them.
The options there would be part of the field options.
If you want to remove the field from the screen, your best bet is to look at the workflow transition to see which screen is attached and edit that one
