Hi there - We have a big problem with email signatures that contain embedded images and make JSM tix almost impossible to read. I know Atlassian has simply said no fix and there’s a lot of fuming, but surely there must be workarounds that users have built. Does anyone here know of some? Thank you!
I believe this article answers your questions:
Hey Sayed,
I'm also experiencing issues with signatures in JSM, but that link just redirects to the splash page: https://support.atlassian.com/jira-service-management-cloud/docs/receive-requests-from-an-email-address/ . Even clicking the tile in that splash page just loops back to the splash page. Is there any other way to access the article for signature settings?

All I can think of is to delete all attachments when a ticket is created. I know not ideal if the users can possibly submitted an attachment you actually need on create. You could then follow that with an automation action to comment on the ticket to reload any needed attachments.
Additionally you could play around with regular expression to look for only jpeg attachments or something like that to at least limit the removal needed of documents if your users dont typically need to send in a jpeg.
Just a few ideas to think outside of the box a little bit.
