Click: Filters > View all Filters > Create Filter
When I get to the Filter page to create a new filter, the Created in the last 30 days is defaulted as one of the filter selectors (see below). It wasn't always there (I've been working in Jira since 2020), but in the recent past, it has shown up.
How do I remove this as one of the default filter selectors? I almost never need it and I have to take the step to remove it each time I create a new filter.

Atlassian can start by addressing 8 - 10 year old issues on their backlog and not force in new stuff no one asked for. The default 30 days SERVES NO PURPOSE and helped no one ever. Take it out.
I don't believe you can removed the default setting. Have you tried to Switch search mode to "Switch to JQL"? Although you will still have the query shown with "created >= -30d order by created DESC", we simply just type in our new search criteria in JQL to over-ride the default setup.

That's the problem, Joseph. The created in the last 30 days isn't a default. It was never there for the past 4 years I've used Jira in filters. It was only recently that it has shown up and I don't want it. How can it be removed?

Interesting... I was never aware of this as a problem. I would recommend you to contact Atlassian Support (https://support.atlassian.com) for their input/assistance on this ask.
