Can anyone recommend an app for Jira cloud to anonymise personal information held in Service Desk and Software tickets?

Instead of using the applications, I would suggest to apply the issue security schemes. You define the security levels where you specify which user, group, project role and etc. who can access the specific issues.
You also create a separate issue type and apply it to the project.
This is if you are storing sensitive data in your issues. You can also go with Data Protection and Security Toolkit for Jira (DLP) .
I've worked with Actonic, and I could recommend their apps.
